 How To Make Veg Kolhapuri



Ingredients required:

For Masala

  1. Oil - 2 table spoon
  2. cardamom - 3 
  3. cinamon - 1
  4. cloves - 3
  5. pepper - 3 to 4
  6. star anise - 1 or 2
  7. coconut - 1 cup
  8. zeera - 1 tea spoon
  9. coriander seeds - 1/2 cup
  10. cashew - 7-8

For Gravy

  1. Oil - 3-4 table spoon
  2. Onion - 1 finely chopped
  3. ginger - small piece
  4. garlic - 2 to 3 piece finely chopped
  5. Hing (asafoetida) - 1/2 tea spoon
  6. Tomato - 2 finely chopped
  7. Tomato ketchup - 2 table spoon
  8. Soya sauce - 1 tea spoon
  9. Pasta sauce - 1 table spoon (OPTIONAL)
  10. chilli powder - 1 tea spoon / according to your taste
  11. Salt - according to your taste
  12. Garam masala - 1 tea spoon
  13. Pav bhaji masala - 1 tea spoon
  14. Kasuri methi - 1 table spoon
  15.  veggies of your wish - 1 cup each [french beans, carrot(boiled), potato(boiled), green peas, capsicum, cauliflower(boiled)]
  16. panner - 7-8 cubes
  17. cream - 2 table spoon
  18. Coriander - finely chopped

Procedure:

Preparation of masala:

Heat oil in a pan. Add cardamom, cinamon, cloves, pepper, star anise, zeera, coconut, coriander seeds and fry it well (the quantity of each is as mentioned in ingredients). Now turn off the heat, let it cool for some time. Then add this into a mixer jar and add cashews, make it a fine paste. Our masala for kolhapuri is ready.

Preparation of gravy:

Heat oil in the pan. Add finely chopped onion, ginger, garlic or ginger garlic paste (1 table spoon), hing sort it well, fry it until onion changes its colour. Now add chopped tomato fry it for some time. Now its time to add all suaces and masala to the fry. keep the flame in low and add tomato ketchup, soya sauce, pasta sauce (optional) mix it well. Now add chilli powder, salt, garam masala, pav bhaji masala, kasuri methi and mix it well. Add little hot water and let it cook for 1 min more. now add french beans, panner, boiled vegetables with green peas, mix it well. Add cream and sort it. At last sprinkle some coriander leaves and garnish it. Our Veg Kolhapuri is ready to serve with deliciuos rotis or naan.😀😋
